\n\u2022 1 Roma Tomato, seeded and diced
\n\u2022 1\/4 cup Feta Cheese, crumbled
\n\u2022 1\/3 cup Cucumber, peeled and sliced
\n\u2022 1 Tbsp Olive Oil
\n\u2022 1 Tbsp Balsamic Vinegar
\n\u2022 1 Tbsp Water
\n\u2022 1\/2 teaspoon Basil
\n\u2022 1\/2 teaspoon Oregano
\n\u2022 2 Handfuls Lettuce
\n\u2022 Salt and Pepper<\/p>\n
Directions<\/strong><\/p>\n1. Cook chicken separately in cajun seasoning.<\/p>\n
2.In a medium bowl, combine chicken, olives, onion,green pepper, tomatoes, feta cheese and cucumber. Stir gently to combine ingredients.<\/p>\n
3. In a separate small bowl, whisk together olive oil, balsamicvinegar, water, basil, salt, pepper and oregano.Pour over chicken mixture and stir gently.<\/p>\n
4. Serve on a bed of lettuce<\/p>\n
