Protein Cajun Tortilla Pizza

Protein Cajun Tortilla Pizza

Recipe:

Ingredients:

– 1IMG_3054 Multigrain Tortilla
– 1 4oz Chicken Breast, sliced into strips
– 2 tsp Oregano
– 2 tsp Basil
– 2 tsp Garlic
– 2 tsp Chili Flakes
– 1 tsp Onion Powder
– 1 tsp Sea Salt
– 1 tsp Black Pepper
– 1 tsp Paprika
– 1 tsp Thyme
– 4 tbsp Passata
– 4 fresh Basil Leaves
– 1/2 cup/56g Low Fat Mozzarella
– 1 Green Chili, sliced
– 1 tbsp Olive Oil

Method:

1. In a bowl add your chicken breast and all of your seasoning except 1 tsp oregano, basil and garlic. Add your oil, mix and cook in a pan for 5-6 minutes or until evenly cooked. Place to the side.
2. In a bowl add your Passata, second tsp of basil, garlic and oregano and mix together.
3. Spread onto your tortilla along with your cheese and add the fresh basil and chili.
4. Add on your cooked chicken and place in the oven at 430f/220c for 5 minutes.
5. Take out the oven and add more fresh basil, a sprinkle of oregano and slice evenly with a pizza cutter.

Lovely recipe Liam, I switched it up by putting chopped green pepper on and used mini tortillas and ended up rolling them up like mini fajitas! Really tasty, will definitely make again!

You can also add fat free cheese for more protein

This is such an easy ‘go-to’ meal that takes just a few minutes to prepare, satisfies the craving for pizza, but doesn’t feel like you’ve over-indulged at all! (unless you have 2 or 3 of them!)
I just grab what herbs I have available and mix it up for a quick feed!
